Crock Pot Cream Cheese Chicken

Delicious served over spinach noodles
Makes six servings

6 boneless, skinless chicken breasts and/or thighs (approx. 4 ounces each)
1/2 envelope dry Italian salad dressing mix
2 teaspoons olive oil, divided
1 small onion, chopped
1 garlic clove, minced
1 (10-3/4 ounce) can reduced fat cream of chicken soup
4 ounces reduced fat cream cheese
1/2 cup chicken broth

Place chicken in crock pot, sprinkle with Italian dressing mix and drizzle with 1 teaspoon olive oil.. Cook on low 4 hours.
Heat 1 teaspoon olive oil in saucepan, sauté onions and garlic. Add soup, cream cheese and chicken broth and stir until smooth. Add this mixture to crock pot and cook on low for 1 hour more.
