Vinaigrette

Makes approximately 5 servings of 2 Tablespoons each

Ingredients
1 teaspoon Dijon mustard
1/2 small shallot, minced
4 teaspoons balsamic vinegar
4 tablespoons orange juice, preferably fresh
salt and pepper
4 teaspoons olive oil
1 tablespoon fresh herbs, minced

 Preparation
Whisk together first 4 ingredients in a bowl.  Add a generous pinch of salt and pepper.  Slowly drizzle in oil, whisking vigorously until blended. Add fresh herbs and use immediately or cover and chill.
